The machine uses a closed water circuit system that injects fresh water into individual frozen cells whilst maintaining temperatures of -30°C during the freezing process. Excess water drains through dedicated outlets, whilst cell walls prevent expansion from all sides. This design protects against contamination throughout production.
All Hoshizaki machines are straightforward to operate, clean and maintain, making them practical for busy commercial kitchens.
